Hi Jenn,
Thanks so much for visiting and sharing some great ideas on sneaking more veggies into foods. Pureeing veggies to flavor or thicken soups is a great way to sneak them in!! This would work well with all sorts of soups, and veggies could be well-hidden in soups like a pureed black bean soup. Another recipe I saw earlier was for easy pumpkin muffins with chocolate chips that relies on yellow cake mix and a can of pumpkin puree. I think these would be a hit with my kids and the pumpkin gives a great punch of Iron & Vitamins A & C. (I'll definitely use these for lunch box treats I won't have to feel too guilty about!). Hope to see you at xobobox again!

I hide veggies all the time. When I make pasta sauce, I will puree whatever veggies I have leftover for the week with the tomatoes. I've used cauliflower, zucchini, green peppers, onions, spinach, etc... It all gets pureed so no one can see what I put in there!

I've done the same thing making chicken tortilla soup, just pureeing more veggies in with the broth, as well as beef stew. It's so good and good for me too, because I am picky at eating veggies!

Diana, Thanks for visiting! I have heard that the Sneaky Chef is great, though I haven't seen it yet. It is funny how different kids can be... one of mine just loves vegetables, and the other I have to be very creative in sneaking them into his diet. It is great there are some resources out there to help those of us with picky kids! If you come across a favorite home recipe for doing this, please send along.

I came across a similar book concept which also uses spinach in brownies! It is The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids' Favorite Meals (www.thesneakychef.com). This one definitely disguised the super-healthy stuff well, but I think it needed to be a bit richer. The author does present a lot of options as far as when you want to take a store-bought item and sneak stuff in as well. I'd maybe go that route if I had to take the brownies or cakes to a party, but I am still working through some of the recipes to see if we can be true to them at home.
