5 Easy Dinner to Lunch Box Menus

If you would like to save time/energy and your sanity in packing your kids lunch every day, I suggest making a couple of dinner meals a week lunch-box-raviolisthat easily transform into main lunchbox  foods. Here are my 5 favorite–we rotate through and cook these a couple of times during week and pack leftovers right into the lunchbox.

  1. 1. Frozen Raviolis We buy large bulk bags of frozen cheese raviolis. Cook some extra at dinner time and put a few with fresh parmesan and olive oil in each lunchbox. Side with any fresh vegetables and a turkey roll up or hard boiled egg.
  2. Chicken Wraps Whenever you cook chicken for your evening meal, cook an extra breast or two to turn into easy lunchbox meals. Make chicken salad or strips and roll up in a tortilla with mayo, lettuce and any favorite fillings for the lunch box.
  3. Mac & Yeast A healthy family favorite version of Macaroni & Cheese, we make this meal at least twice a month. Use cool shaped pasta like bowties, swirls, or shells and they will be a hit in the lunchbox. Great with broccoli or asparagus.
  4. Pizza We are cursed with one child who actually does not like pizza. However, for the normal child pizza is a favorite, hot or cold. Pizza is a fun family dinner to make, especially if you let each kid make their own little pizza. They’ll enjoy making pizza so much, have them make 2 and pack one in their lunchbox the next day.
  5. Quiche This meal may be high in fat, but also high in protein and other nutrients. Our kids enjoy helping make quiche, cracking all the eggs and stirring in cheese, spinach, onions, and any other veggies we decide to add in. (we usually use frozen crust to keep it easy). Add a slice of quiche to the lunchbox and throw in an apple or strawberries and you have a well rounded lunch box meal.

For an all-in-one lunch leftover, I take leftover pasta and add a bit of frozen spinach to the sauce. It’s a great way to sneak in a vegetable (since it looks like just some extra herbs and spices in the sauce) and makes lunch more well-rounded.

Slices of a large or Mini Spanakopitas (greek phyllo spinach pies) are a favorite, also for wintertime, chili from last night’s dinner packed in a thermos with cornbread on the side.

It is really easy to pack soups and chili in lunches if you have a thermos. I am a middle school student and I love to take leftover chicken chili or taco soup in my lunch the next day! My mom will be posting the recipe to the chicken chili soon. Do you have and suggestions on a good thermos for the lunch box, Meg?

Bryson, thanks for visiting and I love soup for lunch, too! As for food containers, I like the Thermos food jars but most of them are too small (10 oz, so not much more than 1 cup). So, I would suggest the larger Stanley 17 oz food jar or Thermos Nissan 16-ounce Food Jar (you can see both of these on Amazon.com, and I have also seen some good food jars at Target or Walmart).
